Vittorio is our special extra vecchio, named after my father. Vittorio, my father, is a wonderful person, sweet-tempered and tough at the same time, with a serene and generous heart and my guide in the care of our vinegar barrels. Vittorio, the vinegar, resembles him: dark brown, transparent, shining, with a complex and persistent scent, full body, well balanced by the blend of acidity and sweetness, with a mild fruity savour given by the sweet cherry wood. All traditional balsamic vinegar inherits certain characteristic features of its producer. Vittorio, born of fragrant Trebbiano grapes coming from our ancient vines, more than others has been absorbing dad’s personality.

Vittorio is available in a limited number of pieces - 100 bottles per year

Ingredients

  • Cooked grape must aged for more than 25 years in series of barrels through a peculiar ageing technique.

Product Characteristics

  • It has a dark brown, transparent, shining colour, a surprising mild fruity bouquet of scents and flavours, a perfect balance created by the symphonic blend of acidity and sweetness a mild fruity savour given by the sweet cherry wood of the barrels in its ageing series.

Use

  • Particularly indicated to top ice cream, sweet or savoury crème brûlée, strawberry or cherry salads.
