THE PROTECTED DESIGNATION OF ORIGIN AND ITS CERTIFICATION

All the supply chain for the production of traditional balsamic vinegar is certified: from the grapes till the finished product. All the production phases are recorded in registers and checked by the certification authority. There is a law which rules the production of traditional balsamic vinegar of Modena and which recognize the Protected Origin Designation to the product, according to the European Regulation CEE 2081/92.

 

All traditional balsamic vinegar is tested before bottling by a committee of expert tasters. The tasters evaluate the visual characteristics, the perfumes and the flavour of the product giving a score. Only the product certified by the tasters is given the Protected Designation of Origin (POD) and it's bottled in a bottle which is exclusive for Traditional Balsamic Vinegar and the same for all the producers.

The 100 ml bottle for Traditional Balsamic Vinegar has been designed by the famous Italian designer Giorgietto Giugiaro. All the bottles are numbered and for each batch we bottle the certification authority keeps a sample as a guarantee of the quality of the product in the batch and for its traceability.
