We make it traditionally

La Cà dal Nôn (The house of the grand father) has been producing Traditional Balsamic Vinegar of Modena for generations. It is a most ancient product of the Modena region and for sure unique in the world. A vinegar based on cooked grape juice aged in series of barrels.

Vineyards

If you want you can ask to visit the vineyards, on the hills of Savignano sul Panaro, 10 minutes from Vignola. In good weather you can enjoy a wonderful view of the castle of Vignola and the Monte Cimone The vineyard is a few minutes walk from the old medieval village of Savignano..

During the visit you'll make a tour of the acetaia walking in the perfume of the ancient lofts,among the great-grand father barrels and the old cooper tools.
We'll guide you through the discovery of our Traditional Vinegar: from the grapes,the cooking of the must,the aging and the final Protected Certification of Origin.

The people behind the barrels

  • Vittorio Montanari The boss

    Vittorio is the one who hold the reins in the hand. He his the grandson of the Grandfather "Alfonso" to whom the house is entitled. His passion for our family, for traditional balsamic vinegar and for the house where he was born makes "La Cà dal Non" the incredible place it is today. In his free time he enjoys to plant new vineyards and to start new series of barrels for his grandchildren!
  • Giovanna Montanari Visits and Administration

    Giovanna is the nice lady that will welcome you during your visit at La Cà dal Non. She'll always make sure that all your wishes are fulfilled. She'll tell you the fascinating story of traditional balsamic vinegar, show you the old barrels of great-grand father. She'll tell you how to make the best use of our vinegar at home... so follow her and you'll enjoy your tour!

    Mariangela is our "general manager" who knows how to make the best out of every situation. In short, she takes care about the promotion, packaging, and every kind of matters from the vineyards to the vinegary.If you have any need for traditional balsamic vinegar or balsabmo condiment, she is the right person for you. Oh, and she's the one to make experiments and new recipes with traditional, saba and balsabamo. She has a passion for cooking books and her kitchen is always a work in progress laboratory.
